Callaloo is a prolific growing amaranth variety with deep cultural roots in Jamaica. Leaves of this amaranth are massive and full of flavor and nutrients. Steamed with onions, garlic, scotch bonnet peppers, and bit of salt and pepper and you have a hearty vegetarian dish. We acquired this from a dear Jamaican friend years ago and it has followed us since then, jumping into our cooking pans, seeds jumping in our pockets. Harvest all season long by picking larger leaves and letting the smaller leaves mature. This is great for eating and/or for selling as a green at the market. Consider cutting seed heads as they form or you may find them growing in your garden the following year. We don't mind them showing back up because we simply eat them!
